La Union

La Unión comes from Finca La Unión II in Acatenango, Guatemala, a kilometre from the town of the same name. The farm sits in a valley between two volcanoes: the dormant Acatenango and the still-active Fuego, whose ash regularly settles across the surrounding slopes, keeping the soil young, loose and rich in minerals, while heavy rainfall keeps it moist. The Higueros family has farmed here since the 1950s. Today, César and his wife Nora run the farm together, introducing a new wet mill, mechanical washing and parabolic drying beds as they continue refining how their coffees are processed. This washed Bourbon and Catuai was originally selected for the rounded body and soft citrus character it contributes to our Equilibrium blend. Presented as a Single Origin, it offers a chance to experience those qualities on their own, with orange-like acidity, milk chocolate sweetness and a roasted hazelnut finish. Recommended to rest beans for 7-10 days from roast date before consuming.
