Palestinian Zaatar - is a name for “wild thyme” in Arabic, but it is also an aromatic herbal blend of herbs. An unadulterated version would include wild thyme, sumac, roasted sesame seeds, sea salts. The spice mix originates in the Middle East. Its bold flavor compliments any dish. Sprinkle a little over cut potatoes and roast. Sprinkle on a cream cheese bagel. Mix with olive oil and use as a dip for pita bread. Sprinkle on fish, salmon, chicken, or hummus. The possibilities are endless! Dukkha - a cousin to zaatar. This dukkha comes from the West Bank. It's a protein-packed herb mix including ground hazelnuts, grains, and legumes, like ground wheatberries and chickpeas. Other ingredients include cumin and roasted sesame seeds.
