Inside Skirt
The Inside Skirt Steak is cut right next to the Flank, and is narrower and thinner than the Outside Skirt. This cut is naturally flavorful, extremely tender, with lots of creamy fat marbling throughout. The Inside Skirt Steak cooks to juicy perfection (do not cook past medium to ensure you maintain its tenderness). You can add a chimichurri marinade, your favorite rub, or just a bit of salt and pepper, and grill, sauté broil or roast your steak. Always cut against the grain to maximize tenderness.
