With little infrastructure to rely on, producers load mules with harvested cherry and walk their yields down into the valley for processing. Traditionally, Sochiapam had a reputation for large yields, but often lower quality. With the introduction of better tasting varietals in lieu of blander hardy ones, better harvesting practices, and improved processing facilities, producers in Sochiapam harness all the coffee growing qualities that Oaxaca offers. The coffee is clean, sweet, and full-bodied. Sochiapam perfectly represents classic coffee flavors, but can also still surprise.
