Colombia - Sandoval

Region Tolima Altitude 1850 MASL Variety Chiroso Process Natural Arsenio Sandoval is a coffee producer of a small-scale family run farm, producing high quality dry parchment coffee. He recently introduced the Chiroso variety to his farm, which is renowned for its distinctive cup profile. Only the ripest cherries are selected at harvest, before undergoing a slow fermentation before drying on raised beds. Using this natural process results in a sweet, complex cup with vibrant fruit flavours and delicate floral notes that showcases Chiroso's unique character. In the cup is notes of fresh pineapple and red apple with a delicate caramel sweetness and a lingering wine gum finish.
