2025 Fauna

Fauna is a fruit-driven, unoaked red blend with a bright, berried lushness and a lightness in structure indicative of our ultra cool-climate in Nova Scotia. A partial carbonic maceration contributes amplified fruit flavours, velvety texture and immediate drinkability. The warm, dry 2025 growing season brought exceptional fruit concentration while preserving freshness, lending added depth, structure, and balance to this vintage. Technical Details Composition A blend including Léon Millot, Marquette, Maréchal Foch & Petite Pearl Alcohol 12% pH 3.54 Total Acidity 6.23 g/L Residual Sweetness 10.8 g/L Tasting Notes Deep violet hue in the glass. The nose opens with a generous layered bouquet of wild blueberry, Bing cherry and blackcurrant compote, alongside fresh herbs, anise, tarragon and Italian basil. Floral notes and hints of verbena mingle with earth and savoury undertones of gravel, alfalfa and tar. The palate is smooth and elegant, with bright purple fruit, fresh acidity and fine-grained tannins bringing balance, texture and length. The finish is persistent, with lingering notes of dried cherry and anise. Best served slightly chilled. Pairing suggestions include grilled flank steak, dry-rub ribs or eggplant Caponata.
