Creamed Honey

Creamed honey — also called whipped honey or spun honey — starts out as regular honey. We control-crystallize it into a smooth, spreadable texture instead of leaving it liquid. Ours goes through a specialized in-house process built for a finer crystal than most creamed honey on the market, which is why it stays smooth on the spoon instead of turning grainy or sugary. It still doesn't contain any cream or dairy — the name refers to the texture, not the ingredients. And because it's already has fine crystals, it won't drip off a knife or biscuit the way liquid honey does, which makes it easier to portion and a lot less messy on the counter. We start with raw wildflower honey from Alabama, then cream it plain (Traditional) or blend in real ingredients for five flavored versions: hand-ground Saigon cinnamon, freeze-dried raspberries, Ghirardelli Majestic dark cocoa (22% cocoa butter), freeze-dried lemon juice powder, and a fall-only pumpkin spice blend. Every flavor except Traditional includes sea salt — it cuts the sweetness and makes the flavor come through instead of just adding sugar on top of sugar. One tradeoff worth naming: creamed honey isn't a substitute for liquid honey in anything that needs to pour or dissolve. It's built for the spoon, the toast, and the biscuit — not the tea kettle.
