The spirit is poured into oak barrels and left alone. Years pass. Summers arrive and leave. Winters return. The wood slowly breathes with the changing air, giving a little of itself to the liquid inside. What begins sharp and raw gradually becomes smoother. Deeper. More complete. The master distiller cannot rush this process. The barrel decides the pace. When the whisky is finally poured into a glass, it glows with an amber hue.
