INDOPUSAKA ESTATE WEST JAVA, INDONESIA Grape Soda, Cabernet, Dried Fig Indopusaka is a natural-processed lot bursting with grape and red wine character, grown by PKNI (Pusat Kopi Nusantara Indonesia) — a specialty coffee operation based in Cianjur, West Java. Led by Rivo Trie Septiadiguna, PKNI keeps community impact central to its operations: providing hands-on support to farmers through collaboration and knowledge-sharing across the network, and fostering long-term partnerships built on trust and shared commitment to quality. For this lot, freshly harvested coffee cherries are carefully selected and spread in thin layers on patios or raised drying beds to dry under the sun. Throughout the drying process, the cherries are regularly turned to ensure even moisture reduction. Once the cherries reach a raisin-like dryness, they’re milled to reveal the green bean beneath — a process that lets the bean soak up sugars and compounds from the fruit, building a vibrant flavor profile.
