For this lot, freshly harvested coffee cherries are carefully selected and spread in thin layers on patios or raised drying beds to dry under the sun. Throughout the drying process, the cherries are regularly turned to ensure even moisture reduction. Once the cherries reach a raisin-like dryness, they’re milled to reveal the green bean beneath — a process that lets the bean soak up sugars and compounds from the fruit, building a vibrant flavor profile. This vibrant coffee presents the sweetness of Grape Soda, the acidity and fermentation of Cabernet, and an anchoring dried fruit flavor of Fig.
