Hambela Deri Fahmi

We're really excited for this one: this is a very clean, floral and blueberry-driven cup. The cup is enhanced by black tea and ripe apple in the perimeter of the profile. Definitely one of our top lots of the year. This exceptional natural-process lot was produced by smallholder farmers delivering carefully harvested ripe cherries to the Deri Fahmi washing station, operated by the family-owned Testi Specialty Coffee in Ethiopia's Guji region. Founded in 2009 by Faysel Abdosh, Testi has earned a reputation for innovation and uncompromising quality, with its premium-preparation approach emphasizing meticulous cherry selection and sorting. Quality is upheld through rigorous processing at every stage. Only perfectly ripe cherries are accepted, with underripe, overripe, and defective fruit removed before the coffee undergoes density separation in flotation tanks, where only the healthiest, densest cherries are retained. The selected cherries are then evenly spread across raised African drying beds in thin layers and carefully turned several times each day to ensure consistent sun exposure.
