One coffee. One processing style. One roast curve. The difference? The moisture level in the green. Normally, green coffee is ready for export when it has between 10% to 11.5% total moisture content. This is the standard as it helps avoid problems with mould on traditionally long shipping routes. Did you know that when the moisture percent is higher, so is the sweetness? Our shipping channel isn't traditional. These coffees were harvested in February/March and were airfreighted from the farm to our roastery in a matter of days. Now you have a chance to experience the difference that higher moisture content makes. Try the exact same coffee at two distinct moisture levels and see the difference it makes.
