This expression is made entirely from mature, wild Agave cupreata, known locally as penca ancha due to its remarkably wide, tooth-rimmed leaves. The plants are harvested by hand, roasted in an underground conical stone pit oven fueled with white oak, and mechanically shredded. After a completely natural, open-air fermentation using wild ambient yeasts, the spirit undergoes double distillation using an ancestral Filipino-style hybrid still. This distinct apparatus features a hollowed-out higuera blanca (white fig) tree trunk sitting atop a copper pot. Bottled at 44.6% ABV, it is a highly textural, savory, and beautifully funky spirit that prioritizes pure agave character, earth, and umami over simple smoke.
