Romana courgettes are thinly sliced and gently fried until golden and tender, then folded through spaghetti with a touch of pasta water and our vegetarian caciocavallo. As the cheese melts, it creates a silky, lightly emulsified sauce that clings to every strand. The delicate sweetness of the courgette is balanced by the savoury depth of the aged cheese, finished with fresh basil for a bright, aromatic lift.
