Mellow - La Dinastia - Anaerobic Washed Maragesha

Bio: This is our first time working with Mellow, but they have been on our radar for a bit now. The owner has placed in the dutch brewers cup & tasters cup and sources some really awesome coffees. They're pretty fresh on the scene, but we are very excited to be working with them! Roast Profile: Light roast. Something like ‘American Light’. On par with Helm or Hex level of development. They roast their high end lots on an L100 & their more standard lots on P3000. Rest Recommendation: 3-6 weeks Why did we bring this coffee on? I'm a sucker for herbal complexity, so I'm excited for that! Also have only had one maragesha before. Interesting variety thats a cross between margogipe & gesha. Not many farms seem to have it. Tasting Notes: Thyme, lemongrass, black currant
