Berkshire Coppa (Boston Butt Roast)

The Coppa is typically referred to as the Boston Butt outside charcuterie circles. The opposite of what you would expect with such a name it actually comes from the the shoulder of the hog. It is known to exhibit some of the best marbling and strongest color of any cut. Low and slow is your friend! Braise, roast or smoke for the win.
