Mainstay - Peru Single Origin
Peru has been growing coffee since the 1700s, but it wasn’t until the early 1900s—when Britain took control of 2 million hectares of land—that Peruvian coffee entered the global market. By the mid-1900s, much of that land was returned to local farmers. While this empowered small producers and encouraged more sustainable farming, many struggled (and still struggle) to access resources to market their beans internationally. Thankfully, that’s changing. The Fair Trade Organic Women Coffee Project with Lima Coffees brings together 110 women-led farms in northern Peru—and they pay women farmers a premium for every lot. We use beans from this project in our Mainstay roast: a rich, balanced medium-dark coffee with notes of molasses, clementine, and toffee. It’s a staple on drip at the bar and our most popular bag.
