The farms here are small and family-run, sitting between 1,300 and 1,700 meters above sea level where the altitude slows the cherry's development and builds the kind of density that translates directly into flavor. What lands in the cup is heavy-bodied and grounded, leading with dark chocolate and roasted walnut before giving way to a stone fruit and raisin sweetness that keeps the finish interesting.
