Hatsukokoro Hikari SLD Kiritsuke Gyuto 210mm

The Hatsukokuro Hikari Series is made from SLD semi stainless steel laminated in soft stainless. These are hardened to ~63hrc and have great edge retention. SLD, though considered semi stainless, is virtually stainless in our eyes and is very easy to care for. The blade face has a unique finish, mirror-like with a haziness to it. These are ground very thin and performance focused. Fitted with an octagonal mono ebony wood handle.
