2022 Funnels Pét-Nat
The "Funnels" started as one of those happy-accident wines that turn into a tradition. Maureen and I press Pinot Noir off its skins for our rosé program, and instead of throwing the skins away we rehydrate them with early-picked, high-acid Chardonnay juice. The Chardonnay pulls just enough color and fruit out of the spent skins to make a pale ruby base wine — and then we let it ferment with native yeast until it's almost dry, bottle it before fermentation finishes, and let the rest happen inside the bottle. That's pet-nat — pétillant naturel — the oldest way to make sparkling wine. We hand disgorge every bottle ourselves so it pours clear. Minimal sulfur at bottling. Fruit comes from Finnigan Hill in the Chehalem Mountains, certified organic, 1,000 feet, sandy loam. Late-ripening site with cool nights — perfect for keeping the acid we need to make this work. Tasting Notes Pale ruby with lively natural bubbles. Red cherry, strawberry, and subtle citrus on the nose. Light-bodied, crisp, and vibrant with bright acidity. Pairing & Serving Fresh salads, grilled vegetables, light seafood. Serve chilled (45–50°F).
