Since the beginning, Villa Pastora has been a family business. Generations of producers have worked on this farm, handing down knowledge and sharing their passion throughout the decades. Today, Villa Pastora led by Yulieth Mora. She helped transform Villa Pastora from a farm to a community hub, where they support locals through creating job opportunities, offer advice on post-harvest techniques, and support neighboring producers who lack infrastructure. The farm has always employed sustainable farming methods while focusing on quality. This lot of Ombligon, a rare variety known for their "belly button" like shape and expressive flavor profile, was processed with a strain of Saccharomyces cerevisiae yeast to ensure a longer mucilage fermentation. Once done, the cherries were dried on patios for 15 days. We are excited to introduce you to the first Ombligon in our line-up, a coffee with sweet lingering notes of apricot, floral like chamomile, with bright notes of pink grapefruit.
