Ethiopia, Banko Gotiti
A familiar Ethiopian character with notes of berry, complex acidity, and a lively tropical nuance. Cherries are washed and sorted by density and sugar content, with the ripest selected for fermentation. They are sealed in oxygen-free tanks for 96 hours, allowing fermentation to convert sugars into lactic acid and enhance the coffee’s flavor. The cherries are then dried on raised beds for about 20 days, where they are regularly turned for even drying. Tracon Trading, a family-owned Ethiopian company with 30 washing stations, is known for high-quality coffees. In 2021, two lots placed in Ethiopia’s Cup of Excellence top 20. This coffee comes from their Banko Gotiti station in Gedeb, Yirgacheffe, where smallholders grow high-elevation, flavorful beans.
