Produced by Edwin Noreña at Finca Campo Hermoso, Apple Crumble is an intensely expressive lot that showcases the cutting edge of Colombian fermentation science. This coffee undergoes a triple co-fermentation and carbonic honey process featuring Mossto, a liquid rich in organic acids and microorganisms derived from fermented coffee cherries. During this multi-stage fermentation, green apples are introduced to the tanks to impart a vivid and unmistakable fruit profile. The result is a loud, sparkling cup with syrupy green apple sweetness, a tart acidity reminiscent of candy, and a slight boozy funk on the finish.
