Small, sweet and intensely flavoured, Sugar bananas are a world away from the supermarket Cavendish. These are grown at Conscious Ground in the Byron Bay hinterland, a certified organic agroforest farm where the soil is treated as the foundation of everything. Lady Finger bananas are naturally higher in sugar with a honey-like flavour and a thin, delicate skin. They ripen gently and are best eaten when fully yellow with a few freckles beginning to appear. How to use: Eat fresh, nature did the work. Slice over porridge or granola with a drizzle of honey. Blend into smoothies for natural sweetness without added sugar. Freeze overripe bananas and blend for a one-ingredient ice cream. Bake into banana bread, the smaller size concentrates the flavour beautifully. How to store: Store at room temperature, away from direct sunlight. Do not refrigerate. Cold temperatures damage the flesh and halt the ripening process.
