El Mural is a blend of coffees from two remarkable regions, Citalá and La Palma, located within a protected area shared by El Salvador, Guatemala, and Honduras. Here, farms thrive in ideal agro climatic conditions, where coffee grows alongside avocados, cacao, citrus, plantains, and bananas, forming a naturally diverse ecosystem. The soil is nutrient rich and carefully maintained with three rounds of fertilisation each year, supporting healthy and productive crops. The landscape, however, is steep and demanding. Harvesting is labor intensive, and in many areas, coffee cherries are still transported by mule or horse, a reflection of both the terrain and the traditions that persist within it. This lot represents the work of approximately 25 producers who have partnered with Caravela for over a decade. These farmers are deeply rooted in coffee, with many coming from second, third, or even fourth generation families. For them, coffee is not just a crop, but a craft shaped over time. The coffee undergoes a meticulous double washed fermentation process lasting 24 to 30 hours. It begins with flotation to remove lower density cherries, followed by 12 hours of whole cherry fermentation. After depulping, the coffee ferments again in parchment for 12 to 20 hours before being fully washed and dried to a moisture content of 10–11%.
