Expect notes of lemon, green apple, white peach, ripe citrus, white flowers, flint, chalk and subtle saline minerality. Compared with Fourchaume, which is often broader and more generous, Les Vaillons feels a little more linear, energetic and mineral-driven, with juicy green fruit, fine acidity and a long, stony finish. Billaud-Simon’s broader house style is described by the estate as light, crystalline and iodised, and this Premier Cru fits that identity well. Excellent with oysters, sashimi, sushi, grilled prawns, scallops, steamed fish, crab, lobster, roast chicken, goat cheese, Comté, creamy seafood pasta and mushroom risotto. For a Singapore table, it would pair especially well with Teochew steamed pomfret, Cantonese steamed garoupa, drunken prawns, crab bee hoon, lobster noodles, seafood hor fun or lighter dim sum dishes.
