Situated between 1,600 and 2,000 metres above sea level, La Divisa benefits from volcanic soils, moderate temperatures, and slow cherry maturation, creating the conditions for complex and expressive coffees. The lot is comprised entirely of Tabi, a variety developed by Colombia's National Coffee Federation through a cross between Timor Hybrid, Bourbon, and Typica. Released in 2002, Tabi was designed to combine strong resistance to coffee leaf rust with the cup quality traditionally associated with Colombia's most respected varieties. Today it remains a favourite among producers seeking both quality and resilience. Following harvest, ripe cherries undergo 45 hours of controlled aerobic fermentation before being dried as a natural process. Retaining the fruit throughout drying contributes additional sweetness and intensity while preserving clarity and structure in the cup. Diofanor Ruiz has become known for producing coffees that showcase both varietal character and meticulous processing. This lot highlights the vibrant fruit profile that Tabi can deliver when grown at altitude and carefully handled from harvest through to drying. In the Cup Expect a fruit-driven profile with notes of raspberry, passionfruit and black cherry, supported by a rich dark chocolate finish.
