Each box holds a 250g dough ball, the right weight for a 30cm pizza, with an airtight integrated lid that keeps the dough from drying out during fermentation. For larger pizzas or thicker bases you may want a slightly heavier dough ball. A single box per portion still works, just with less headroom for expansion during proof. Can the boxes be used for cold fermentation? Yes. The boxes are fridge-safe and well suited to slow cold fermentation over 24 to 72 hours. The airtight lid prevents the dough from drying out or absorbing other fridge odours during a long proof. Are the boxes food-safe? Yes. The polypropylene and polyethylene used are food-contact certified materials. Are the boxes dishwasher safe? Yes. Both the boxes and lids are dishwasher safe. Hand washing is also fine.
