Colombia Nestor Lasso Ombligon

FRUITY BELLY BUTTON COFFEE FOR ALL! This coffee was produced by Nestor Lasso and his brother Adrian at Finca El Diviso. They’re known for their innovative approach to coffee varieties and processing. For this lot, they selected the rare Ombligón variety. Ombligón means belly button in Spanish. The ripe cherries were oxidized in mosto for 48 hours, thermal shocked, and fermented anaerobically for 38 hours with brewer's yeast before being dried to 18% moisture, stabilized, and finished to a target moisture of 11%. The result is a fruit-forward cup with notes of Watermelon Jolly Rancher, peach, and white sugar.
