Hawk and Horse - Lake County Cabernet Sauvignon

Hawk and Horse's Cabernet Sauvignon comes from an 18-acre estate high in Lake County's Red Hills AVA, where red volcanic soil and elevations past 1,800 feet push the vines hard. The Boies family farms it certified organic and Demeter Biodynamic, right down to the Scottish Highland cattle that support the closed-loop system. Expect layered black fruit, plum and blackberry, with a smoky edge and firm tannins built for the cellar. Pour it alongside grilled ribeye or aged cheddar.
