Producer: Domaine Boissonnet Wine: 2024 Saint-Joseph "Emisphere" Red Varietal: 100% Syrah. The Saint Joseph rouge de Boissonnet is the result of a blend of two, particularly distinct and complementary terroirs. The vines on the highlands of Serrières are balanced with the Syrah on the granite slopes of Saint Désirat. The latter are marked by maturity and beautiful southwest exposure. Harvesting: By hand with a partial destemming at 80%. Vinification: Alcohol fermentation in thermo-regulated vats (28-33°). Vatting period of 15 to 21 days with moderate cap-punching and pumping-over. 35 to 40 hl/ha with maturing in barrels for 15 months. Tasting Notes: This elegant Saint-Joseph opens with expressive aromas of ripe blackberry and blackcurrant, layered with violet, subtle pepper, and fragrant spice. The palate is juicy and finely structured, with vibrant dark fruit supported by fresh acidity and supple, polished tannins. A distinct mineral character adds depth and lift, carrying through to a smooth, persistent finish. Refined, balanced, and beautifully fresh. Pairings: Grilled lamb with rosemary and thyme — the richness of the lamb works with the wine’s structure, while the herbs complement its savory, spicy Syrah character. Beef bourguignon, roasted lamb with thyme, and vegetarian tagine. Cellaring: Aged 12-15 months in barrels, this classic, old-school beauty is characteristic of the appellation. Thoroughly enjoyable, it's also relatively approachable now or cellar until 2037.
