Biodynamic Rubicon Light Roast, Mold Free Organic Coffee

Rubicon Light Roast is a bright, expressive coffee with floral notes, smooth hints of nuts, chocolate, and caramel, and greater origin character. Organic and lightly roasted to preserve more of coffee’s naturally occurring chlorogenic acid and other antioxidants. Well suited for Pour Over, Filter and AeroPress brewing. Of our four roasts, Rubicon Light Roast retains the highest level of chlorogenic acid, a naturally occurring polyphenol that contributes significantly to coffee’s antioxidant capacity and is better preserved through lighter roasting. Ochratoxin A and aflatoxins come back below the detection limit, and Biodynamic® coffee is grown without synthetic pesticides under Demeter and organic certification. Third-Party Lab Results Every harvest of Biodynamic coffee is tested by independent, accredited laboratories. We publish every certificate of analysis here, unedited. What we mean by mold free, every harvest is tested for 16 mycotoxins, the toxins mold produces. No ochratoxin A or aflatoxin has been found at or above the lab’s reporting limit in any sample we have tested. We test for the toxins mold produces rather than counting mold itself, and no test can guarantee every bean. Because our coffee is Demeter certified Biodynamic, no synthetic pesticides, herbicides, or fungicides are permitted anywhere on the farm purity is built in at the source rather than chased after the fact.
