Costa Rica Las Lajas Series - Honey Processing The yellow honey iteration of this series is the closest one to a washed coffee, in that the majority of the fruit matter is washed off, with only a very small amount of fruit remaining on the seed. We taste a pleasant Pineapple note that reminds us of this processing - the acidity is softened by a Cane Sugar sweetness present in each sip. On the finish, we taste a gentle floral note reminiscent of Hibiscus. We've noticed this coffee excels on a flat bottomed brewer.
