His Gimelli Vineyard Chardonnay comes from a tiny, 245-case production sourced from a high-elevation site in the Gabilan Mountains, where rocky, limestone-rich soils and the cool marine influence of nearby Monterey Bay create ideal conditions for Chardonnay. The hand-harvested grapes receive a short period of skin contact before being fermented with indigenous yeasts in seasoned French oak puncheons, preserving both the purity of the fruit and the vineyard's distinctive character.
