Producer Info: Champagne Apollonis, the estate of the Loriot family in Festigny in the Vallée de la Marne, traces its viticultural roots back to 1675, with 12 generations of winegrowers. However, it wasn’t until 1931 that the family produced its first 300 bottles of Champagne. Today, Michel Loriot, who established his own estate in 1977 with his partner Martine Pierson, carries forward the family’s winemaking heritage alongside their daughter Marie, an oenologist, and her husband Alban, who oversees production. The 7-hectare estate is planted predominantly to Meunier (80%), with Chardonnay (18%) and Pinot Noir (2%), and is certified HVE Level 3 for its environmentally responsible farming. Michel practices sustainable viticulture, including grass cover, organic fertilizers, copper treatments, and rigorous pruning to encourage deep rooting and concentrated fruit, while grapes are traditionally pressed and wines are kept separately by parcel and cru to preserve traceability and terroir expression. What makes Apollonis particularly distinctive is the family’s deep connection to music. Since 2010, their wines aging on lees have been exposed to classical music, including Beethoven, Mozart, Brahms, Vivaldi and Elgar, and selected vineyard parcels receive a process called protéodie, in which music is used with the intention of supporting vine health.
