Cider Club: Pommeau of Herefordshire 20%

This is our homage to the great Pommeaus of Northwestern France. Following the French method, we combine our own apple brandy with a select blend of freshly pressed apple juices and then age it in barrel for quite some time, typically two years or more. This element of time is so important, allowing the wood and luscious sweetness of the apple to temper the fiery young spirit. In the end, what emerges from cask is something super elegant, rounded and rich, yet still vivid and fresh. Honey and butterscotch sweetness, a hint of burnt caramel, vanilla, star anise and the juicy freshness of the apple, all combined into something utterly delicious. Pair it with a fine cheese board or bistro classics like Tarte Tatin or Crème Brûlée. Before dinner enjoy with ice and a splash of soda water.
