This lot comes from Korgua Estate in the Chuave district of Papua New Guinea, where coffee grows high in the mountains between 1,600 and 1,800 meters. The cherries come from a group of around 40 smallholder farmers who have been working with Sirigine Coffee Producers, an organization founded by longtime coffee farmer Paul Sirigine to help connect local growers with specialty coffee markets. After harvest, the coffee goes through an anaerobic natural process, creating a cup that's fruit-forward, rich, and full of sweetness. Coffee is grown on steep hillsides, and most of the work—from caring for the trees to harvesting ripe cherries—is done by hand. Story Once the cherries reach peak ripeness, they're carefully harvested and placed into anaerobic fermentation, where they ferment in sealed tanks before being dried naturally under the sun on patios and tarps.
