After, the parchment is rinsed into the tank with a lot of water four times. Next, it’s put inside the parabolic solar dryer for around 12 days, during the dryer the parchment is sorted by hand to remove defective beans. Santos worked from a young age in clothing factory, but a few year ago, he wanted to change his lifestyle, so he left his job and began working in the coffee industry. He remembers that his grandfather worked on his coffee farm for many years and always took the family to accompany him in his work. 10 years ago, Santos discovered and purchased the property he currently owns. That same year, he started preparing a coffee nursery. Shortly after, he quit his job and dedicated himself entirely to the farm. Now, he relies solely on it for his livelihood. When he first started producing coffee, he sold it as conventional coffee, but it was not profitable due to the low market prices. He struggled financially and even considered selling the farm. However, a friend and neighbor introduced him to the concept of specialty coffee and shared how he was successfully selling his own coffee. He connected Santos with the San Vincente mill, where he received valuable support and training on how to prepare micro-lots of coffee. Three years ago, Santos prepared his first micro-lot of specialty coffee, and since then, his situation has improved significantly.
