Sustainably grown in the hills of Shizuoka, Japan by Hattori-san, a fourth-generation farmer and pioneer in his field, this matcha is carefully crafted from hand-picked tea leaves of a single cultivar: the Okumidori variety, well-renowned for its matcha profile. This makes Kiwami rare, as most matcha is made using a blend of cultivars from multiple farms in order to achieve the desired balanced taste. Shaded by solar panels using Hattori-san’s patented technique and fertilized exclusively with organic materials, Kiwami is now USDA Certified Organic, a recognition that reflects how this matcha has always been grown. After harvest, the leaves are steamed immediately to stop oxidation and lock in color, flavor, and nutrients. They’re dried, de-stemmed, and de-veined down to pure tencha, then stone-milled to order at low temperatures, so that nothing about the leaf is altered or lost before it reaches you.
