The TCM Soup
Approved by our Traditional Chinese Medicine (TCM) advisor, Naria Diaz Chi, this Qi-enhancing vegan soup harmonizes ingredients that TCM identifies as deeply nourishing, healing, and detoxifying. An aromatic base broth of nutty Shaoxing wine simmered with ginger, garlic, and white pepper, we add antioxidant-rich beech and shiitake mushrooms, immunity-boosting goji berries, and blood-sugar-regulating Chinese yam. A helping of lily bulbs promotes lung health, and a dash of ginseng improves concentration. Lily bulbs have a crunchy texture and mild, slightly sweet flavor, similar to artichoke hearts or water chestnuts. They add a refreshing, earthy touch to the soup.
