Les Lavières, named after its flat limestone slabs, delivers structure and aromatic lift. Tawse, a Canadian-owned, organically and biodynamically focused producer farming small parcels, produces limited quantities with a light-touch approach. The warm 2020 vintage shows vibrant raspberry, cherry and floral notes with a hint of spice and silky tannins. Bright yet balanced, it pairs beautifully with duck, roast chicken, game birds or earthy mushroom dishes.
