From The Winemaker The 2021 vintage of our Estate Cabernet Sauvignon is an elegant expression of our vineyards, beautifully showcasing how our grapes thrive in cooler and longer growing seasons. Fruity aromas like dark currant and orange peel complement brilliantly hints of spices like cloves and cinnamon as they waft from the glass. Once on the palate, characteristics of tobacco and dark cherries balance this wine’s bold and daring tannins. After a short time in the glass, the tannins round out to reveal a silky and lingering finish. This wine will reward you if you open one now and just the same if you revisit it decades later. Vinification Palmaz Vineyards completely eliminates mechanical pumps by using a 18-story underground gravity-flow system carved directly into the volcanic rock of Napa Valley's Mount George. Instead of forcing delicate liquids through motorized blades and tubes, the winery relies entirely on nature's propulsion system to guide the grapes and wine downward through the vinification stages. Mechanical pumps cause violent turbulence and friction. This mechanical agitation breaks apart delicate tannin polymers and grape skins, leading to excessive oxidation and harsher, bitter flavors. By relying strictly on gravity, the wine's molecular structure remains undisturbed, resulting in a cleaner texture and smoother, silkier tannins.
