About the Cheese Punch is the newest creation from the celebrated Fen Farm Dairy in Suffolk – and a wonderfully characterful addition to the British cheese scene. This seasonal washed-rind cheese is made during the summer months from the rich milk of Fen Farm’s Montbeliarde cows as they graze the lush Waveney Valley pastures. Inspired by the style of Epoisses, it begins with a fresh, lactic curd before being carefully washed as it matures, developing a distinctive sticky orange rind and a beautifully soft, yielding centre. Expect wonderfully savoury flavours of yeast, sweet hay and caramel, with a delicious meaty richness reminiscent of the crispy edges of a roast. As it ripens, the centre becomes increasingly silky and gooey, while retaining a fresh lactic character at its heart. Named after the magnificent Suffolk Punch working horses that once worked the surrounding farmland, this is a true seasonal cheese, produced for only a few weeks each summer. Enjoy it while you can.
