"THE BEAST 3D" Uganda Mt. Elgon Kapchorwa Black Honey Process

This coffee is a revision of our bright and beautiful "John the Beast". In this case, it starts with the same bean, but with a twist. This is a "Black Honey Process" version of St. Elgon's bean. Instead of going through a washing process, the musilage is left to dry on the bean. This leaves higher levels of residual fruit, which translates into a sweeter, fruitier finish. In this case, blackberry, dark plum, golden raisin, and cranberry. It tends to caramelize more during roasting resulting in brown sugar sweetness as well. As a city roast, it will do well in filtered coffee and espresso.
