The region is characterized by its high altitudes, abundant rainfall, fertile soils, and an enormous diversity of microclimates. All of this contributes to creating coffees with highly varied profiles, from floral and citrusy cups to sweeter and fruitier coffees. Sidamo takes its name from the Sidama people, native to the region. Its landscape, marked by the Great Rift Valley, is green, fertile, and deeply linked to agriculture. Smallholders and traditional cultivation Most of Sidamo's coffees are grown by small producers on family plots of less than 5 hectares. Coffee is often grown alongside other crops, a common practice among small farmers that allows for better land utilization and supports families. Many farms are traditionally and organically managed, with very little or no use of fertilizers or pesticides. Harvesting and much of the field work are done manually. From tree to cup The cherries are hand-picked when they reach optimal ripeness and delivered to collection centers or washing stations. Once there, they are sorted to remove damaged or unripe cherries. Then they are de-pulped and fermented for about 24 hours, depending on climatic conditions. After fermentation, the parchment coffee is carefully washed and sorted in water channels according to its density. In some cases, it is soaked in clean water for 12 to 24 hours to completely remove any remaining mucilage. Then, the coffee is dried on raised beds under shade for 10 to 14 days until it reaches the appropriate moisture level. During drying, it is turned and hand-sorted to remove any damaged or discolored beans. This process results in a clean, smooth, and balanced cup.
