Tasting notes A calm and layered white wine with understated complexity. Aromas of grains are complemented by green apple and quince, gradually opening to reveal tropical notes reminiscent of pineapple with aeration. On the palate, fresh lemon flavours and vibrant acidity form the backbone of the wine, layered with subtle nutty, smoky, and lightly toasted nuances. The finish is long and savoury, with mineral notes and umami adding depth beyond the fruit. More suited to the dining table than enjoyed on its own, the wine continues to evolve beautifully over two to four days after opening. Food pairing Cured mackerel, oysters preserved in olive oil, smoked duck, grilled bamboo shoots, dishes prepared with white miso, saikyo-yaki Spanish mackerel, chawanmushi, butter-seared scallops, chicken in cream sauce, Comté cheese. Winemaking Made from 100% Chardonnay grown in Domaine Nakajima’s estate vineyards in Tomi City, Nagano. The fruit comes from young vines aged three to five years in the Mido vineyard, representing an early chapter in the development of this site. The 2024 growing season was marked by consistently warm conditions from spring through autumn. Even so, the young vines produced a wine distinguished by vibrant acidity and delicate fruit expression. Rather than focusing solely on ripeness, the wine reflects a balance of acidity, savoury complexity, and fermentation-derived character, offering a transparent expression of place. After harvest, the grapes were crushed without destemming and pressed using a vertical basket press. Fermentation took place with indigenous yeasts in resin tanks before maturation in used 225L French oak barrels. No sulphur dioxide was added and no racking was carried out during élevage; 40ppm of sulphur dioxide was added only prior to bottling. Approximately 730 bottles were produced. Alcohol: 11%. Enjoyable now, but likely to gain greater harmony with six to twelve months of additional bottle age.
