TZELTAL TZOTZIL, CHIAPAS MEXICO

TZELTAL TZOTZIL, CHIAPAS, MEXICO TASTING NOTES BROWN SUGAR, HOT CHOCOLATE, CLEMENTINE ORIGIN MEXICO REGION CHIAPAS PRODUCER COOPERATIVA DE PRODUCCIÓN TZELTAL-TZOTZIL VARIETY BOURBON, MUNDO NOVO, TYPICA ALTITUDE 1460 METERS PROCESS METHOD FULLY WASHED ABOUT Tzeltal Tzotzil is back, and this is one of those coffees we’re always happy to see again. It comes from a group of family-owned farms in northern Chiapas organized around the Cooperativa de Producción Tzeltal-Tzotzil. Most of the farms are small, generally under ten acres, and coffee is very much part of a larger agricultural life. Many of the producers also make honey alongside their coffee. One of the things we love about this coffee is how much of the work stays close to the farm. Producers use their own micro mills to depulp, ferment, and prepare their coffee, giving them more control over the process from cherry through drying. The cooperative has also put a strong emphasis on organic production methods, both as a way of caring for the land and as a means of improving coffee quality and creating better income for the families growing it. The coffee grows around 1,460 meters above sea level and is a mix of Bourbon, Mundo Novo, and Typica. After harvest it is fully washed, giving the cup a clean structure that lets all of that sweetness come through. Our roast of this year's lot lands in a really comforting place. Brown sugar gives it a deep, familiar sweetness, hot chocolate brings a rich cocoa character and fuller body, and clementine comes through as a bright little pop of citrus that keeps the whole thing from getting too heavy. It’s sweet, balanced, and incredibly easy to keep drinking. There are coffees we bring in because they're completely wild and unlike anything else on the menu, and then there are coffees like Tzeltal Tzotzil. We bring this one back because it’s just really good. It has enough going on to keep the coffee nerds happy, but it’s also the kind of cup you can brew every morning without having to think too hard about it. Sweet, chocolatey, a little bright, and a coffee we’re very happy to have back from Chiapas.
