Shinshu Miso"Shiro" - 信州蔵人 白味噌 450g
This white miso is crafted using a traditional 100-year-old cedar barrel method, made with Shinshu-grown soybeans, domestically sourced rice, and sun-dried salt. It is aged for a shorted period of 3 to 6 months to preserve its fresh character. Using a high koji ratio(120%), this early-matured miso develops a naturally mild sweetness.
