Paolo Bea began commercial wine production in 1980, making wine the way his family always had: without pesticides, herbicides, additives, or manipulation of any kind. Before the natural wine movement had a name, Paolo was already one of its founding practitioners — a co-founder of Vini Veri, the non-interventionist producers' organisation. His son Giampiero, who oversees winemaking and commercial operations, has further defined the Bea philosophy with characteristic bluntness: "Nature should be observed, listened to and integrated, not dominated. Wine is not made by man but generated by nature." The Pipparello is the estate's top red cuvée — the Riserva bottling that represents the fullest, most structured expression of what this ancient hilltop farm can produce. Vineyard & Winemaking: The Pipparello vineyard is a hilltop site in Montefalco at 1,300 feet above sea level, planted on clay and gravel soils, with vines a minimum of 20 years old. Harvest takes place in the middle of October, and the cuvaison is one of the longest in the region — extending 40 to 50 days — coaxing every layer of tannin, aromatics, and structure from the co-planted field blend. After spontaneous alcoholic fermentation without temperature control, the wine spends one year in stainless steel tanks, then two years in large oak barrels, and a final year in bottle before release. No fining, no filtration. The wine arrives when it's ready — which for the 2019 means it's only now approaching its first window. Tasting Notes: The 2019 Pipparello is brooding and deeply layered: dark cherry, leather, forest floor, and dried herbs on a nose of real complexity and restraint. On the palate the structure is formidable — Sagrantino's grip evident in the tannins — but the Sangiovese backbone keeps things bright and directional, with dark fruit and earthy depth carrying through a long, staining finish. This is the kind of wine that rewards patience as much as attention, demanding time in the glass and years in the cellar. Serious, ancient, irreplaceable.
