Candied Sweet Potato with Vanilla Marscapone and Toasted Walnuts (GF/V)
This dessert we learned at the Monte Cardon cooking class in San Jose Del Cabo. And it surprised all of us how unbelievably delicious it was. Slices of sweet potato cooking a spiced syrup made from piloncillo sugar, clove, cinnamon, and star anise. Then topped with a marscapone which I am infusing with vanilla and topped with toasted walnuts. This dessert was devoured by our entire group, and we were already full!
