TANAT Coffee is located in Paris, France From TANAT Score: 91 This exclusive micro-lot, produced in an extremely limited edition, is the result of a fascinating collaboration between the agricultural excellence of the Altieri family and the ultra-precise approach of Lost Origin Coffee Lab. This Geisha coffee comes from "Dilgo," a historic 1.5-hectare plot located on the Mima Estate farm (Alto Quiel), in the foothills of the Baru volcano. Grown at an altitude of 1800 meters on rich volcanic soil, these precious Geisha coffee trees thrive under 60% shade, in the heart of a guabo and cedar forest adjacent to the protected national park. Rather than simply being sun-dried, this coffee underwent a cutting-edge, three-step process: an initial three-day drying on raised African beds in a greenhouse to reach 45% moisture content, followed by a three-day anaerobic fermentation at low humidity, confined in GrainPro bags. Finally, Lost Origin's expertise culminated in a slow, 35-day drying process in a climate-controlled chamber, maintained at a strict and constant temperature of 18°C and 50% humidity. The cup is absolutely clear, offering a complex, floral and intensely tropical profile where delicate notes of jasmine tea, mango, papaya and guava intertwine.
